We’ve been trying to reproduce the issue you reported, but haven’t been successful so far. Could you please provide a bit more information to help us narrow it down?
Specifically:

What firmware version is currently running on your Quest 2?
How much available storage space do you have on the device?
You can check the storage by going to Settings → General → Storage, and the available space will be shown at the top right corner of the storage menu.
Are you using your Quest2 as a standalone device or are you connecting it to your PC (Link) when running DeoVR app?

Quest 2 is version v79.1033.
I have about 40GB of free storage space.
I'm using Quest 2 as a standalone device.
Would like to revert to 15.0.

We tested multiple times with the same setup as yours on version 15.1 but were unable to reproduce the freezes you’re experiencing. Could you please try uninstalling and reinstalling DeoVR from the Meta Quest Store and let me know the outcome? Additionally, after watching a video for 2–3 minutes, please send us a bug report directly from the app by going to Settings → Bug Reports → Send. Once submitted, note the report number generated and share it with me.

Using deovr vr quest for years, wish i can revert to 14 was a very version less bugs, i use this version on a old quest 2, but keep the wifi OFF else it will autoupdate, no way to disable auto update that does not work updates anyway, i notified deovr support several times about the bugs in 15 for the past 18 months and had several updates and the issues were NEVER fixed.

I also want to roll back to version 15.0. The newer versions are very buggy and make the app unusable. How can I do this while using Meta Quest Link?

Over the past 3 years, the best and most stable version of deovr after dozens of updates, is version 13.18.1592 no bugs, everything works in transform menu and sharpness etc, colors are good, my advise is to set a link i.e beta or rc release tab to roll back to this version till all the bugs in 15.2 is fixed.

As others have indicated there are numerous issues with the latest version. I am also interested in previous version either 13.18.1592 or 14 or 15.0. Please provide a link if possible.
